Prahok Aing | Griled Fermented Fish with Minced Pork and Krasaing

















+ Ingredients
-  50g prahok
- 100g minced pork (bacon)
- 2-3 stalks of lemon grass
- 4-5 garlic cloves
- 3-4 krasaingal
- 1 tbsp sugar
- 1 chili for garnishing
- Banana leaves for wrapping

+ Method
   Slice lemon grass stalk then chop with garlic almost fine, set aside. Splite krasaing into two parts and remove its flesh, set aside. Chop bacon and Prahok until fine, then add lemon grass stalk and krasaing continue chopping until well mixed. In this stage add a little bit of turmeric to get coulor, season with sugar and slat. But being sure, Prahok has a salty taste. Then wrap it with banana leaves and bring to grill over hot coal until cooked.
     Prahok Aing is served with crunchy vegetable, like cucumber, cabbage and long bean.
