Pineapple Soup with Herb | Samla Kaeng M'noas


+  Ingredients
    - 400g pork rib, cut in cube
    - 400g pineapple, sliced
    - 1 cup coconut cream
    - 2 cups coconut milk
    - 2 cups water
    - 2 tbsp fish sauce
    -  2 tsp palm sugar
    - 1/2 tsp salt (taste)

+ Kroeung
    - 3 tbsp lemon grass stalk, sliced thinly
    - 1-2 slice of galangal
    - 2-3 slices of turmeric
    - 3 garlic cloves
    - 3 shallots
    - 2 kaffir lime leaves, sliced
    - 1 tbsp dried red chili, soaked and chopped into a paste
    - 1 tsp kapi
    - 2 tsp roasted peanut, pounded
    - chi neang vong (basil)
 + Method 
    Kroeung is ready to cook, place 2 tbsp oil in pot over a medium low heat, then add kapi and chili paste and fry constantly for about 1-2 minute or until it is turned seal, add kroeung and peanut pounded and continue  frying, so that it is well blended, in this stage 2-3 tbsp water is needed when the mixture release of good smell, add pork rip and stri again, about 2-3 minute. Then add pineapple and coconut cream before remove from heat, lastly add chi.
