+ Ingredients
- 400g fresh fish
- 4 cups water
- 2 lemon grass stalks, cut and crush
- 3 slices of galangal, crush
- 1 tbsp uncooked rice
- 1 tbsp salt
- 2 tbsp fish sauce
- 1 tsp white sugar
- 1-2 lime
- chi: basil, saw mint and spring onion
- 1-2 bird chilies
+ Method
Place 1 tbsp uncooked rice in pot with water and bring to the boil. Chop lemon grass stalk into two pieces and crush, then add to the pot with sliced galangal. Let it bubble for 5 minute while the scent in fuses the water and then add the sliced fish. Cook fish about 7-8 minute, season with salt, sugar and fish sauce. Just before serving drizzle lime juice and garnish with chopped herbs and spring onion.
