Sour chicken soup with herbs | S'ngao chruok sach moan


















Ingredients
   -  500g chicken
   - 5 cups water
   - 2 lemon grass stalks, cut and crush
   - 3 slices of galangal, crush
   - 1 tbsp uncooked rice
   - 1 tbsp salt
   - 2 tbsp fish sauce
   -  1 tsp white sugar
   - 1-2 lime
   - chi: basil, saw mint and spring onion
   - 1-2 bird chilies

Method
   Place 1 tbsp uncooked rice in pot with water and bring to the boil. Chop lemon grass stalk into two pieces and crush, then add to the  pot. Allow it bubble for a few minute while the flavour is released, add the chicken chnuks. Continue to boil until chicken cooked for about 9-10 minutes, then season with salt, sugar and fish sauce. Just before serving drizzle lime juice and garnish with chopped herbs and spring onion.
