Sour lobster soup with herbs | S'ngao chrouk bangkang

























+ Ingredients
   - 3 lobsters
   - 4 cups water
   - 3 lemon grass stalks, crushed
   - 3 slice of galangal, crushed
   - 5 leaves of kaffir lime
   - 1/2 tbsp uncooked rice
   - 1 tbsp salt
   - 2 tbsp fish sauce
   - 1 tsp white sugar
   - 1-2 limes
   - chi: khmer basil or chi neang vong, saw mint and spring onion
   - 1-2 bird chilli

+ Method
   Place uncooked rice in a pot with water and bring to the boil. cut lemon grass stalk in a half pieces and crush, when water is bubble place lemon grass stalk, galangal and kaffir lime leaves to the pot, let it bubble for a few  minutes while the flavour is released, then add the lobster. Continue to cook for about 6 minutes. Season with fish sauce, salt and sugar. just before serving add the lime juice and garnish with chi and spring onion.
