Spicy Stuffed Beef | Sach Ko Chror Nouch















+ Ingredients 
    - 400g beef
    - 100g grease, sliced in small stripe
 + Kroeung
    - 2 tbsp lemon grass stalk, sliced thinly
    - 1 1/2 tsp galangal
    - 1 tsp turmeric
    - 1 tsp parsley root
    - 1 tsp kapi 
    - 5 garlic cloves
    - 4 shallots
    - 5 dried red chili, soahed, drained and chopped into past
    - 2 tsp white  sugar
    - 1 tbsp fish sauce
    - 1/2 cup coconut cream

+ Method
   Make the kroeung by pounding lemon grass stalk, galangal and parsley root  in stone mortar until fine, then follow with garlic and shallots when smooth add kapi and red chili paste, continue pounding lightly until well mixed. Boil pork  grease until cooked, then slice in small stripe and set aside. Slice beef thinly, beat to flatten then cut into rectangles about  5cm x 8cm. Blend the kroeung into flatten beef with half coconut cream and season with fish sauce and sugar. Place 2 or 3 of pork grease onto one haft and roll over. Then stick the beef rolls about 3 rolls together with skewer, make like that until use up. Then , bring them to grill over the hot-coal until golden or cooked.
    To be sure, when grill, don't forget to brush with coconut milk, make it bright and good smell.This dish is eaten with vegetable pickle.
