Pos Ko Tik Prahok | Boiled Cow's Offal with Prahok Sauce













+ Ingredients
   - 500g cow's offal

+ Prahok Sauce
  1. 80g prahok
  2. 50g pineapple
  3. 5-6 garlic
  4. 2-3 slices of galangal
  5. 1 kaffir lime leaf
  6. 3 tbsp sugar
  7. 4-5 lemon garss stalk, thinly sliced
  8. 2-3 tbsp peanut, roasted, pounded
  9. 2-3 limes, sliced 
  10. 2-3 bird chilies
  11. 1 cup bubble water
+ Vegetable
    -  1 green banana, slice
    - 1 cucumber, sliced
    - 1 green tomato, sliced
    - 1 egg-plate, sliced
    - 2-3 longbean, cut
    - 3-4 water grass, julienne
    - 3-4 aquatic plant (Kachhet), cut
    - 1 carrot, sliced

+ Method
   Thoroughly clean cow's offal, then place in pot and bring to the boil over the medium high heat, and don't forget to put in 2-3 leaves of kaffri lime and 1 lemon grass, cut and crushed. Boil for about 1 hour and half or until the meat is tender. Remove from heat, when cool, slice and place in a nice plate, then follow vegetable. 
    
   Prepare the Prahok Sauce:
   Chop prahok with pineapple, galangal, garlic and kaffri lime leaf until fine, then place in the bowl and pour in 1 cup bubble water, stir well and season with sugar and m'souw soup.
    Sliced lemon grass, peanut pounded and sliced lime are set aside in a small bowl, waiting people need it when serve. Pos ko tik prahok is popular dish and it is considered a kind of appetizer.
